The history and culture of South Carolina’s Lowcountry was shaped over the last
300 years by planters, slaves, free people of color, yeoman farmers and their
families. Through war and peace, great prosperity, and abject poverty, their
lives and folkways are woven into the rich tapestry of the American South.
Charleston, South Carolina, rich in cultural diversity, is home to the uniquely Southern, Lowcountry Cuisine. Many of the original recipes
-- or receipts -- include dishes influenced by African, French, Caribbean and Anglo-Saxon tastes. The table set in Charleston, has in its own way, the distinction reserved for culinary destinations like San Francisco and New Orleans.
Executive Chef Brad Jones. “We put a lot of time and effort
into each dish to make it unique,” says Executive Chef Brad Jones. He credits
the authenticity of 82 Queen's Lowcountry Cuisine to its home-grown ingredients. "We
use a lot of local herbs and vegetables, when they’re in season … like okra,
tomatoes, sweet corn, peppers, and mushrooms to showcase our prime cuts of
beef and fresh seafood. Our shrimp, crab, grouper, flounder, snapper
and black fish are so fresh… they were probably swimming in local waters
a day or two before being served at our tables.
