Wasabi Fried Oysters

YIELDS: 2 appetizer portions

INGREDIENTS:
12 extra select oysters
1/4 cup wasabi paste
1/2 cup of half & half
1 cup of cornmeal breading (pre-mix from grocery store)
3 cups of vegetable oil (frying)

PREPARATION:
Marinate oysters in wasabi mixed with cream (8 hours). Drain oysters. Coat lightly with breading. Fry in hot oil (350 degrees) until golden brown.

LOWCOUNTRY PEPPER SAUCE INGREDIENTS:
2 bell peppers
1 cup cider vinegar
2 cups water
3/4 cup of sugar
1 oz. chopped garlic
1 oz. granulated sugar
1 oz. Tabasco sauce
1 oz. tomato sauce
1 tsp. salt

PREPARATION:
Seed and dice peppers. In large sauce pot, add all ingredients and bring to a boil (10-20 minutes) until peppers are soft.

Puree all ingredients in blender, return to sauce pot, thicken slightly with cornstarch. Let cool. Store at room temperature.
